This is the blend we built Milton Coffee Company around.
Seventy five percent Brazil from the Condado estate provides the chocolate forward foundation: cocoa, hazelnut, and malted grain notes with creamy body. Twenty five percent dry processed Ethiopian from Dogo Sodu adds just enough jammy fruit complexity to make things interesting, blueberry and plum undertones with subtle floral aromatics.
Roasted to medium, the profile is balanced. It's complex enough to keep specialty coffee enthusiasts engaged, but smooth and chocolatey enough that anyone can enjoy it. No bright acidity. No challenging flavors. Just well-crafted coffee that tastes intentional.
Why 75/25: The ratio isn't arbitrary. Too much Ethiopian and the fruit dominates. Too little and you lose the complexity that makes this more than just "chocolate coffee." This is the balance, where both origins contribute meaningfully without competing.
Versatility: Works across all brew methods. Excellent as drip or pour-over for morning coffee. Pulls rich, creamy espresso shots that hold up in milk drinks. The kind of blend you can serve to guests without explaining it first.
