Ethiopian coffee gets a lot of hype. This one earns it.
From the Dogo Sodu washing station in Sidamo, this dry-processed coffee delivers the fruit-forward character Ethiopia is known for—but with more complexity and control than you'd expect. The aromatics alone are worth the price: jasmine florals, dried stone fruit, and a distinctive tenadam herb note that adds an almost tea-like fragrance.
Roasted to Full City, the profile shifts from bright fruit salad to something richer and more layered. Think blueberry pie filling and plum jam rather than fresh berries. The jammy sweetness is pronounced but not overwhelming, balanced by subtle bittersweetness and those remarkable floral aromatics that linger in the finish.
Why Dry Process Matters: The cherries are dried intact with the fruit still attached to the bean, concentrating sugars and creating those deep, jammy flavors. It's a riskier process and requires perfect weather and careful monitoring. But when done right, produces some of the most distinctive coffee in the world.
